One of Japan's smallest kura, where a single brewer handles every step and presses each batch over three slow days.
Founded in 1868 in Kazami, Shioya, Tochigi, Kojima Shuzoten is one of Japan's smallest sake breweries, with its head brewing every step of the process personally. Using underground water from the Kinugawa river and Tochigi-grown rice, the kura presses each batch slowly over three days in a traditional fune (wooden trough press), yielding a soft sake with little off-flavor. Its flagship, Kannabi no Sato, is sold and drunk only within Tochigi Prefecture.
