Matsu no Kotobuki — small batches by one of Tochigi's few women toji.
Matsui Shuzoten, founded in 1865 in Shioya, Tochigi, brews Matsu no Kotobuki with clear underground water of the Takahara mountains and local rice, in small hand-made batches. Toji Nobutaka Matsui — one of the prefecture's few women master brewers — aims the sake squarely at the dinner table.
