Founded in 1874 under the shop name Juichiya, this small brewery in Yaita, Tochigi, still lives by a rhyming motto: sake that is "neither too sweet nor too dry, and never tires the drinker" — quality over trend. The house involves itself in growing its own rice and keeps experimenting even while holding onto older technique, balancing tradition with newer approaches as it sees fit.
