Founded in 1806 in Sakura, Tochigi, Senkin has built its reputation on radical restraint. The kura grows its own organic, pesticide-free stock of Kameo, a rare heirloom rice, and ferments it using namakoji — raw, unpasteurized koji, the mold culture that saccharifies rice — in a practice it calls Edo-gaeri, a deliberate return to techniques from before industrial brewing took hold. The philosophy carries through to fermentation itself, which leans on wild, ambient microbes rather than cultivated yeast strains. This uncompromising approach to rice and process has earned Senkin recognition from sake drinkers in Japan and abroad.
