Sake from strawberry yeast, in Japan's strawberry heartland.
Shiraso Shuzo of Nakagawa, Tochigi, makes sake, shochu and liqueurs — and is best known for brewing with a yeast isolated from Tochigi strawberries, Japan's biggest strawberry crop, in its strawberry-yeast junmai ginjo. A member of the Tokyo University of Agriculture flower-yeast research circle, it works with abelia and other flower yeasts too, and keeps its ingredients 100% Tochigi-grown.
