A Wakasa kura that names every tank after the Benten Musume it becomes, and credits the farmer on the label.
Founded in 1909 in Wakasa, in the mountains of eastern Tottori, Ota Shuzo brews Benten Musume, named for the goddess Benzaiten worshipped locally. Each tank is numbered in brewing order — '1-ban Musume,' '2-ban Musume,' and so on — and the back label names the farmer who grew the rice, from varieties such as Tamasakae, Gohyakumangoku, Yamada Nishiki, Gouriki and Torihime. The sake is built to show its best warmed, a style suited to the cold winters of this small mountain town.
