Since 1910 — 黒部市, Toyama
A Kurobe brewery drawing from a nationally celebrated spring, with 26 gold medals at Japan's National New Sake Awards.
Ginban Shuzo was founded in September 1910 in Ogyu village, Kurobe — a place local legend says once had sake spring up from the ground in ancient times. The brewery draws its water from the Kurobe River alluvial fan spring group, named among Japan's Top 100 Famous Waters, and has invested in premium ingredients such as Yamada Nishiki rice. Under the idea of 'sake brewing that intoxicates the heart,' Ginban aims for a smooth, clean sake that doesn't tire the palate, and its labels have won gold at the National New Sake Awards a combined 26 times. Beyond sake, the house also makes mirin, honkaku shochu and vodka.
Junmai Ginjo, unpasteurized undiluted (nama genshu) — polished to 60%, Tominokaori rice, ABV 16%
