A Namekawa brewery named for cranes that once landed in its paddy fields, brewing at its own unhurried pace along the Hayatsuki river.
Chiyozuru Shuzo has brewed since 1877 in Namekawa, Toyama. Its sake was known in the late Edo period as 'Sakurai-shu,' and the brewery took its current name, Chiyozuru ('thousand-generation crane'), after cranes were said to land in the paddy behind the kura. It draws on abundant spring water from the Hayatsuki river system at the foot of the Tateyama mountains, Toyama-grown rice, and the region's cold winters, brewing at a small scale and its own pace to make sake meant for everyday meals.
