A Tateyama kura built by Kengo Kuma for Dom Perignon's former cellar master, blending sakes like fine champagne.
Shiraiwa was founded in 2019 at the foot of the Tateyama mountain range in Toyama, by Richard Geoffroy, who spent 28 years as Dom Perignon's fifth chef de cave. The kura's building was designed by architect Kengo Kuma around principles of inclusiveness, horizontality and community, so that staff and visitors share the same roof. Its sake, IWA 5, is built on assemblage — the blending of multiple sakes — using traditional Japanese brewing methods, with each edition released as a numbered Assemblage.
