Founded in 1885 in Ikuji, Kurobe, Toyama, this brewery draws its water from snowmelt off the Northern Alps that has spent roughly a century filtering down through underground rock. The house blends old-fashioned method with newer approaches, aiming above all for sake that is simply good to drink every day.
