Since 1877 — 岩国市, Yamaguchi
An Iwakuni brewery on the banks of the Nishiki River, brewing only junmai with no carbon filtering — "sake for one more glass."
Yaoshin Shuzo has stood beside the Nishiki River in Iwakuni since 1877, brewing its Gangi label entirely as junmai — no activated-carbon filtering, and no processing after pressing, so the rice's natural umami comes through unaltered. The house's guiding idea is simple: sake worth one more glass at the end of the night. Its range runs from standard bottlings to seasonal limited releases, and in 2025 Gangi Junmai Daiginjo Sekirei won the President's Award at Kura Master, France's blind-tasting competition for Japanese sake.
