The only sake kura by Lake Kawaguchi, using Mount Fuji spring water that stays 12°C all year.
Ide Jozoten began as a soy sauce brewer in the early 1700s and turned to sake in 1850, making it the only sake kura in the Fuji Five Lakes region. Set at 850 meters beside Lake Kawaguchi, the kura draws water that seeped from around the 1,100-meter mark on Mount Fuji, filtering down through the rock at a steady 12°C with low iron and a fine mineral balance. Since 1995 it has contracted local farmers to grow its rice, and in 2020 it extended that fermentation know-how into whisky, opening the Fuji Hokuroku Distillery.
