Shunnoten — a sake named from a poem by Akiko Yosano.
Yorozuya Jozoten, founded in 1790 in Fujikawa, Yamanashi, brews Shunnoten — the warbler's song in spring — a name taken from a waka poem by Akiko Yosano. About 85% of its rice is locally grown, organised since 2011 through a rice-planting committee with local farmers. Its Rokusai gallery, converted in 2001 from a 150-year-old miso storehouse, offers paid tastings (closed Tuesdays).
