A Chita-peninsula kura that still steams its rice in a cedar koshiki, named for a well from legend.
Harada Shuzo, founded in 1855 in Higashiura on Aichi's Chita Peninsula, still steams its rice the old-fashioned way, in a cedar koshiki — a traditional wooden steaming vessel — and shapes each batch of moromi, the fermenting rice mash, through careful, hands-on temperature management rather than automation. Its main label, Ikujii, takes its name from a well in the area said to be tied to the legendary prince Yamato Takeru. Alongside Ikujii, the kura also produces Kinuura Wakamizu, named for the nearby Kinuura inlet on Chita Bay.
