Akita Jozo, founded in 1919 in Akita City, is a micro-brewery producing around 600 koku (about 108,000 liters) a year. Its 2001 facility was built with insulation and climate control that allow four-season brewing, so fresh new sake reaches drinkers throughout the year rather than only in winter. The kura brews everything at junmai grade, applying Akita's traditional low-temperature fermentation techniques for a finish that fades cleanly, like snow — the inspiration behind its Yukino Bijin ('snow beauty') name.
