The Watanabe family has run Fukurokuju in Gojome since 1688, passing the brewery down through generations under a simple motto: rice, water, people. The house limits mechanization to only the steps where it genuinely helps, keeping the rest by hand in pursuit of what it calls 'enjoyable sake.' Its main building is registered as a National Tangible Cultural Property, and the brewery welcomes visitors for tours and tastings. Its Ichihaku Suisei line, milled from locally grown Miyama Nishiki, sits alongside a top-tier Junmai Daiginjo blending Yamada Nishiki and Akita Sake Komachi rice.
Junmai Ginjo — polished to 50%, Gojome-grown Miyama Nishiki rice
