An all-junmai brewery in Misato, drawing on spring water ranked among Japan's 100 finest.
Kuribayashi Shuzoten was founded in 1874 by the family's fifth generation in Roku-go, now part of Misato town, where the fertile Senboku plain and abundant groundwater made brewing possible. The house draws its water from the Rokugo spring cluster, one of Japan's 'Top 100 Waters,' filtered soft through the surrounding land. Every bottle is junmai, brewed chiefly from the locally bred Misato Nishiki rice, fermented with Kyokai No. 9 and the house's own Kameyama yeast, and made without additives beyond rice, water and koji.
