A Yokote brewery named for a crane's morning descent, now led by a female toji devoted to long-aged junmai.
Maizuru Shuzo was founded in 1918 in Yokote, Akita, taking its name — and that of its sake, Asanomai ("Morning Dance") — from a crane that used to descend each morning onto a pond near the brewery. Since 2002, female toji Hanako Kudo has led production, focusing entirely on junmai and long-matured sake. The founding label Asanomai is aged for years, reaching 17% ABV with a balance of sweetness and acidity, while the current flagship is Tabito, brewed alongside the older Gekka no Mai.
