Formed in 1944 when Akita City's sake makers joined forces, now brewing across three kura under one Sannai toji tradition.
Takashimizu was formed in 1944, when sake breweries across Akita City merged into a single house to carry the region's brewing forward together. The kura draws on quality Akita-grown rice and clear groundwater from the Ou Mountains, pairing the cold-season methods of the Sannai toji — a lineage of seasonal master brewers — with modern equipment across three separate breweries. That balance of tradition and scale has earned Takashimizu more than twenty gold medals at Japan's National New Sake Awards.
