Sake, shochu, liqueur and craft gin from a century-old kura in Yawatahama.
Umebijin Shuzo was founded in 1916 in the port town of Yawatahama, Ehime. Beyond sake it makes shochu, liqueurs and craft gin. Its brewing water is drawn from thirty metres underground — subsoil water of Mt. Kinzan Izushi — and it works with Ehime rice varieties Matsuyama Mii and Shizuku Hime as well as Hyogo Yamada Nishiki. Rice husks line the koji room walls as natural insulation. Brewery visits are accepted.
