The Aizu cult label that launched the unfiltered nama genshu movement — brewed by the ninth generation himself.
From Aizubange in Fukushima, Hiroki Shuzo Honten makes Hiroki, the label that pioneered the boom in muroka nama genshu — sake left unfiltered, unpasteurized and undiluted. Ninth-generation owner Kenji Hiroki brews it personally, working chiefly with Gohyakumangoku rice grown in the town itself. Production is small and demand is nationwide, making Hiroki one of the most elusive names in Japanese sake. No brewery tours are offered.
