Fourteen generations deep in the snow country of Minamiaizu, brewing through winters that fall to twenty below.
Founded in 1716 by Harumasa Watanabe, whose nickname 'Kaito' became the brewery's name, Kaito Otokoyama has kept brewing in Minamiaizu's Tajima district for fourteen generations. Winters here plunge to twenty degrees below freezing, and the brewery leans into that cold, drawing on meltwater from the surrounding mountains for its winter brewing. Its Junmai Daiginjo, Junmai Ginjo and Daiginjo lines have taken repeated prizes at the National New Sake Awards in recent years. The brewery does not host individual visitors, but groups can arrange a tour in advance.
