A South Aizu house that brews only premium-grade sake with pristine Oku-Aizu water and a champion Nanbu toji.
Founded in 1870 in the mountains of South Aizu, Kokken Shuzo brews exclusively tokutei meishoshu — sake of premium, legally defined grades — using the clear water of Oku-Aizu. The kura is guided by toji (master brewer) Tetsuya Sato, from the Nanbu brewing lineage of Iwate, known locally as "Japan's number one Nanbu toji." Alongside its core Kokken label, the brewery also produces Tefu, a line aimed at a younger generation of sake drinkers, balancing tradition with new directions.
