A Koriyama brewery whose label recalls a feudal lord's tribute to wisteria blossoming over its old sake house.
Officially founded in 1830 in Koriyama, Fukushima, though the brewery's own history reaches back to a shop called Fujiya Honten, opened in 1710. Tradition holds that a passing lord of the Nihonmatsu domain, taken by the wisteria (fuji) blooming on the grounds, named its sake Fujinoi — "wisteria well." The house now centers its brewing on Yamada Nishiki rice, crafting daiginjo and junmai daiginjo — sake brewed purely from rice, water, koji and yeast — meant less for special occasions than for everyday drinking close to home.
