Named for Aizuwakamatsu's castle and its lake, with a female toji behind its Yuri series.
Tsurunoe Sake Brewery was founded in 1794 in Aizuwakamatsu, Fukushima, taking its name from the crane (tsuru) of Tsuruga Castle and the inlet (e) of nearby Lake Inawashiro. Its guiding principle is to read the face of the sake as it's made, following traditional Aizu craft passed down through its brewers. In recent years the house has drawn attention for its Yuri series, made under a female toji.
