The Tsukuba-foot brewery that pioneered flower yeasts, coaxing sake from blossoms instead of grain alone.
Raifuku Shuzo was founded in 1716 by Omi merchants who settled at the foot of Mt. Tsukuba for its fine water. The brewery is known for its hana kobo — yeasts isolated from flowers — and rotates through roughly ten different sake rice varieties alongside its own cultured strains. Under the motto of quality first, head-on competition, it has built more than 300 years of tradition into ongoing brewing innovation.
