A kura founded in 1879 in the birthplace of the Nanbu toji guild, still using local glutinous rice for its amazake.
Founded in 1879 as Hirota Shuzoten in Shiwa, Iwate, the brewery now operates as Shiwa Shuzoten in a town celebrated as the birthplace of the Nanbu toji, Japan's most renowned guild of master brewers. Under the Hiroki brand, it makes everything from everyday sake to a Junmai Daiginjo polished to a striking 28%, called Albireo. The kura also brews an amazake using glutinous rice grown locally in Shiwa.
