A Rikuzentakata brewery that rebuilt from the ground up after the 2011 tsunami, still chasing a light, clean-drinking style.
Suisen Shuzo brews in Rikuzentakata, on Iwate's Sanriku coast, in a kura founded in 1944. The 2011 Tohoku earthquake and tsunami devastated the brewery, but it rebuilt with the conviction that everyday life — and the history behind it — should carry on. Suisen focuses on light, agile koji-making and clean water, aiming for sake that never tires the palate, however often it's poured. Tours for up to 30 people are available by advance reservation, and the brewery holds tasting events through the year.
