A Fushimi brewery revived in 2002, where the fifth-generation owner brews every batch himself as toji.
Fujioka Shuzo was founded in 1902 in Fushimi, Kyoto, and after a period of dormancy was revived in 2002 by its fifth-generation owner. Guided by the family motto that good sake reaches both heaven and people, he brews as his own toji, hand-making only junmai sake. The flagship, Sookuu ('blue sky'), was named with the hope that it would bring a moment of ease to whoever drinks it. Visitors can watch the brewing through glass at the attached sake bar, En.
