Small-batch brewing five leagues from Kyoto, five from Nara.
Joyo Shuzo was founded in 1895 in Joyo — five ri from Kyoto, five from Nara, as the old saying goes. Around five young brewers make small-batch sake almost entirely by hand, on soft Yamashiro water drawn from a hundred metres underground, under the banner of quality first. The house also steeps an umeshu from Joshu Haku, the rare local plum variety, aged at least three years. The kura opens to the public once a year in March.
