A Fushimi brewery since 1677 that tests every new sake first at its own izakaya before it ever reaches a bottle.
Founded in 1677 in Fushimi, Kyoto, Yamamoto Honke has brewed for more than 300 years using Shirogiku-sui, a local source of soft, prized brewing water. Its Shinsei label supplies Matsu no Midori, the sake served exclusively to the Omotesenke school of tea ceremony, linking the brewery directly to one of Kyoto's oldest cultural institutions. Yamamoto Honke also runs Toriseihonten, its own restaurant, as a kind of pilot shop where the reactions of everyday drinkers help shape how the sake is made.
