The Story of 菊司醸造

Kikutsukasa Jozo has brewed since 1835 in Kose, a former post town on the Nara Kaido road in Ikoma, Nara. The brewery's owner serves as his own toji, favoring highly polished rice, handmade methods and small-batch brewing. Sake is still pressed the old way, using a traditional wooden fune press, and the house has also worked with yeast strains unique to Nara Prefecture in developing new products.
