御代菊
A 300-year-old Kashihara brewery guided by the belief that good sake carries the brewer's feeling to the drinker's heart.
Founded in 1718 amid the Three Mountains of Yamato in Kashihara, Nara, Kita Shuzo was established by Kita Rihei, who chose the site for its water and rice. The kura brews with mizumoto — a lactic-fermentation method using 'Nara Uruwashi' yeast isolated at the temple Shogo-in — to make its Junmai Ginjo and junmai sake. For three centuries its guiding idea has stayed the same: that delicious sake is one whose maker's feeling reaches the drinker's heart.
Daiginjo — polished to 40%, Hyogo-grown Yamada Nishiki rice
Junmai Ginjo — ABV 20%
