Kuramoto Shuzo, founded in 1903 in the mountains of eastern Nara — sake's birthplace — brews under the motto that the mountain is the water, drawing on its forest watershed. Its KURAmoto series, from home-grown Yume Sansui rice, has drawn national attention, while the Tsuge no Himuro series revives Nara's ancient bodaimoto starter. Tours by reservation.
