A Tsuwano brewery whose New Year's sake, Uijin, still follows the traditional kimoto method.
Furuhashi Shuzo has brewed in Tsuwano, Shimane, since 1878. Its flagship, Uijin — a name traditionally associated with New Year celebrations — is made using the traditional kimoto method. Beyond sake, the house also produces aged koshu, distilled spirits and whisky. Its sake has won gold at the Hiroshima Regional Taxation Bureau tasting and medals at the SAKE COMPETITION.
