An Izumo brewery whose name comes from Buddhist scripture: 'when the heavens are calm, nothing is wanting.'
Itanami Shuzo has brewed in Izumo, Shimane, since 1871. In 1916 the house took the name Tenon from a Buddhist phrase, roughly 'when the heavens are calm, nothing is wanting.' The kura follows the San'in ginjo-zukuri techniques of the local Izumo toji lineage, along with traditional kimoto and yamahai methods, aiming for the clear, calm character of sake offered at a shrine. Brewery visits can be arranged in advance through a sake retailer.
