A town-owned Okuizumo brewery milling only local rice, guided by a young Izumo toji's "hard outside, soft inside" steaming.
Okuizumo Sake Brewery grew out of Yachiyo Shuzo, established in 1926, before being taken over by Okuizumo town and re-founded as the present company in the early 2000s, when it relocated and built a new kura. A direct sales shop was registered at a roadside station in 2007. The brewery mills 100% locally grown Okuizumo rice in-house, and a young Izumo toji focuses on "hard outside, soft inside" steaming and uncompromising koji-making.
