A coastal Iwami kura since 1850, its brewing water filtered for centuries through sand from the Chugoku mountains.
Zuisen has been brewed since 1850 in Uratomi, a fishing hamlet in Iwami, Tottori. Rain falling on the Chugoku mountains behind the kura filters slowly through layers of sand, emerging decades later as soft, mineral-rich spring water — the foundation of the sake. Over more than a century and a half, the brewery has kept to an unhurried, hands-on process, choosing its rice and shaping each batch with the character of a true jizake, or local sake, in mind. Zuisen remains a fixture among the fishing and farming families of Uratomi.
