A Uozu brewery named for the North Pacific fishing fleets that once sailed from its port, still crafting sake built to match seafood.
Uozu Shuzo traces to 1878, and its predecessor, Honko Shuzo, began brewing the label Hokuyo ('North Pacific') in 1925 — a name drawn from Uozu Port's history as a base for the North Pacific fishing fleet. The brewery uses abundant spring water from the foot of the Tateyama range, together with Hyogo-grown Yamada Nishiki and Oyama Nishiki, Toyama's first self-developed sake rice, in its pursuit of sake made to accompany the bounty of the sea.
