A Hagi brewery growing its own reduced-pesticide Yamada Nishiki, now guided by a fifth-generation female toji's new label.
Yachiyo Shuzo brews beside a tributary of the Abu River in Hagi, its name drawn from the Kimigayo phrase wishing a household "a thousand, then eight thousand generations" of prosperity. The brewery is unusual nationwide for growing its own Yamada Nishiki rice under reduced-pesticide farming, drawing brewing water from the springs of Mt. Taisho. Since 2019, a fifth-generation female toji has trained at Sumikawa Shuzojo and gone on to launch a new label, La+ YACHIYO, alongside the founding brand Yachiyo.
