A Yamaguchi City brewery with roots to 1611 that revived its own brewing in 2014 after a near 40-year hiatus.
Yamashiroya Shuzo traces its origins to 1611, when a retainer of the Mori clan named Yamashiro Abe began brewing sake in Yamaguchi City; company records place its formal founding in 1875. The Miyazaki family took over the business in 1894. Deteriorating water quality forced the brewery to suspend its own production in 1975 and switch to contract brewing, but it resumed in-house brewing in 2014. Yamashiroya draws on spring water from Yamaguchi Daijingu shrine, one of the region's three famed waters, and Yamada Nishiki rice grown without chemical fertilizer by contract farmers in Tokusa, Ato, committed to sake made entirely in Yamaguchi.
