The Story of 山梨銘醸

Founded in 1750 in the old post town of Daigahara on the Koshu Kaido, Shichiken brews with natural water from the Southern Alps' Mt. Kaikomagatake. Its grounds include a building once used as an imperial lodging for Emperor Meiji, now a nationally recognized cultural property. The brewery has also drawn attention for its bottle-fermented sparkling sake, made through secondary fermentation in the bottle. A reserved "Shichiken Story" tour runs roughly twice a month, taking visitors through the brewery, the former imperial lodging, a shochu cellar and the Gozensui spring, with tastings included.
