A Minami Alps brewery where a former aerospace engineer blends pi-water and wine yeast into traditional sake.
Taikan Shuzo was founded in 1877 in Kofu by Osawa Riemon and today brews in Minami-Alps City, using clear groundwater drawn from the Kushigata mountain range of the Southern Alps. Fifth-generation head Osawa Yoshinobu, who studied aerospace engineering and worked in the auto industry before taking over the family business at 30, has introduced unconventional touches such as pi-water in the brewing process and wine-yeast fermentation. The kura sources over 90% local rice and runs food-education programs with children in the community.
