A small Yatsugatake-foot kura since 1865, fermenting with flower yeasts and pouring from its own Cellar Door.
Takenoi Shuzo has brewed since 1865 at the foot of Yatsugatake in Hokuto, Yamanashi, a small kura named for founder Shimizu Buzaemon and a well fed by mountain groundwater. Alongside sake, it makes junmai shochu, using Yamanashi rice together with sake rice sourced from across Japan, fermented mainly with hana kobo — flower yeasts isolated at Tokyo University of Agriculture. Visitors can taste and buy directly at its on-site shop, NOBU Sakagura Cellar Door, though the kura itself is not open for tours due to its production layout.
