Yamanashi City's only sake brewery, pressing its unfiltered nama genshu slowly over two days in a traditional wooden vat.
Yourou Shuzo has kept its tradition since 1849, over 170 years, as the only sake brewery in Yamanashi City. It draws its brewing water from a spring sourced in the Chichibu mountains via the Fuefuki River, still steams its rice in traditional wagama iron pots, and presses each batch slowly over two days using the fune-shibori method, applying gentle, even pressure to draw out a clear taste free of off-notes. Its mainstay is unfiltered nama genshu, and the grounds include an on-site restaurant and cafe, Sakagura Kai.
