A 330-year-old Aizu kura still brewing in its Edo-era building, drawn from some of Japan's softest water.
Founded in 1688 in what is now Minamiaizu, Fukushima, this brewery still ferments inside a working Edo-period kura — over 330 years old. Its water, drawn from 40 meters underground, ranks among the softest in Japan, and shapes a house style the brewers describe as soft, clean and easy to drink. Guided by the motto wajo ryoshu ("harmony brews good sake"), the kura pairs this ultra-soft water with rice grown in the surrounding Minamiaizu region, blending traditional method with newer technique.
