In snowbound Minami-Aizu, the house behind the cult favorite Roman, brewed with a mochi-rice fourth stage.
Hanaizumi Sake Brewery was founded in 1920 in Minamiaizu, Fukushima, guided by a philosophy of brewing that honors both the region and its brewers. The house has preserved the traditional technique of a mochi-rice fourth stage in the mash, using Aizu-grown Himenomochi rice and the low-mineral, ultra-soft Takashimizu water for a gentle, clean sake. It is best known nationwide for its Roman series.
