An 1711 Koriyama house that farms its own pesticide-free rice, ferments in kimoto style and wooden vats, and reuses 95% of its bottles.
Niida Honke has brewed in Koriyama, Fukushima, since 1711 under the credo that 'sake brewing starts with rice growing.' The house farms its own rice without pesticides or chemical fertilizers, using only that rice and natural water, and earned organic JAS certification in 2009. Its brewers still practice kimoto starter-making and ferment in wooden vats using the traditional kumidashi four-stage method, with the 18th-generation head serving as toji (master brewer). Niida Honke also leads a project reviving Japan's wooden-vat coopers, has partnered with Patagonia Provisions, and reuses 95% of its bottles.
