A 250-year-old Morioka-area house in Shizukuishi that skips carbon filtration to let Mt. Iwate's terroir show through.
Kikunotsukasa Shuzo has brewed near Morioka since 1772, now based in the town of Shizukuishi at the foot of Mt. Iwate. The kura draws on Iwate-grown sake rice and mountain spring water to express what it calls the Shizukuishi terroir, and it avoids activated-carbon filtration to preserve the rice's natural character. Its unfiltered nama-genshu series, Innocent, and the ginjo label Shichifukujin (Seven Lucky Gods) are brewed through low-temperature fermentation for a clean, crisp northern style.
