Kaetsu Shuzo, founded in 1880 in the scenic river town of Tsugawa in Aga, brews with abundant groundwater and fine rice toward its ideal of one person, one sake — individuality in every bottle. Its Kirin Hizoshu, a daiginjo genshu cold-aged more than five years, develops a sherry-like maturity; the Kanbara series offers unfiltered nama limited editions. Weekday tours year-round by reservation, up to twenty.
